To fully enjoy sparkling wine, it’s best served well-chilled—ideally between 45–50°F—to preserve its vibrant acidity and fine bubbles. Chill the bottle in the refrigerator for a few hours, or for quicker results, place it in an ice bucket filled with ice and water for about 20 minutes. When opening, hold the cork firmly and twist the bottle slowly, allowing the pressure to release gently with a soft hiss rather than a pop. Use a tulip-shaped or white wine glass to concentrate the aromas while allowing room for the bubbles to rise. Always pour slowly down the side of the glass to protect the mousse and maintain its elegant effervescence.

Crafted from select North Coast vineyards and made in the traditional méthode champenoise, this wine opens with delicate aromas of green apple, lemon zest, and white flowers, accented by subtle notes of brioche and toasted almond from extended aging on the lees. On the palate, it is crisp and vibrant, with fine bubbles that dance across a bright, mineral-driven finish. Elegant and versatile, this Brut Cuvée brings a sense of occasion to any moment.

MÉTHODE TRADITIONELLE

Méthode Traditionnelle is the time-honored technique used to craft the finest sparkling wines, including those of Champagne. This meticulous process begins with a primary fermentation, followed by a secondary fermentation that occurs inside the bottle—where the bubbles are born. After the addition of a mixture of yeast and sugar, the wine is sealed and aged on its lees (spent yeast cells), often for many months or even years. This extended contact imparts complex flavors of brioche, toasted almond, and creamy texture, while preserving freshness and elegance. Each bottle is then gently riddled and disgorged by hand or machine to remove sediment, a final touch that reflects the artistry and patience behind this revered method.
